Lemongrass & Lime Chicken
My home grown coriander tends to dominate my herb pots, so I love to find recipes where I can use it in abundance. I appreciate coriander can be a ‘love it’ or ‘hate it’ kind of taste, so you could always substitute it for parsley in this recipe.
This is one of my favourite summer recipes - it’s the perfect marinade for a BBQ if you want to skewer the chicken. Lemongrass is a really powerful, but underused, flavour in my opinion. makes this so much flavour and is perfect for alfresco dining.
INGREDIENTS
2tbs soy sauce
1 stem lemon grass
1 lime (juice and zest)
1 garlic clove (crushed)
2tbs fresh coriander (finely chopped)
4 chicken breasts (chopped)
METHOD
In a bowl, mix together the soy sauce, lemongrass, lime zest and juice, garlic and chopped coriander
Add the chunks of chicken and season with salt and pepper. Mix well, then cover and refrigerate. Leave for at least 30 minutes to marinate (or even overnight)
When you are ready to cook, preheat the oven to 190C, or fire up the BBQ!
Thread the chicken onto soaked kebab sticks or spread the chicken out on a lined oven tray
Cook for 20minutes (or until chicken is cooked through)
